Belize

This is the best chicken recipe ever! We marinaded a whole chicken in orange juice and some other stuff, then baked it in a sauce of orange, mango, garlic, olive oil, mustard and fresh thyme. We made a gravy out of the left over sauce. It was sooooo tender and beautiful, we all pigged out! It is actually meant to be made with with fresh papaya, but the closest we could get was tinned mango...it was still great! If anyone wants the recipe-let us know.

Yum. Sounds good but a whole chicken would last me a week, Could you do it with chicken pieces?
When you said you had lots of cheese pie left for lunch, was that the pieces you gave me? I feel bad if you had bread and cheese for lunch! (But I did enjoy the pie)

No, we all got a piece for our lunch. Wasn't it delicious?
You could definitely do this with chicken pieces, although I'd do it with bone-in pieces, as breasts would dry out. Drumsticks would be beautiful. You must remember to baste!
